Mediterranean Soup
Try this great soup on a cold winter day.
Mediterranean Soup
Ingredients:
- 3 tbsp Taste of Inspirations Olive oil
- 2 ea Ribs celery, cut thinly
- 4 ea Cloves garlic, peeled & smashed
- 1/3 c White wine
- 2 tbsp my essentials Tomato paste
- Saffron, 3 pinches
- 8 c Fish or shrimp stock
- ¼ tsp Food Lion Crushed red pepper flakes
- 1 ea Orange, juiced
- 2 Strips orange zest
- 3 c Fennel bulbs, cut crosswise
- ½ c Tomato, peeled, seeded, chopped
- 1.5 tsp Food Lion Sea salt & fresh ground pepper
- 1.5 lb Grouper fillet, cut into 1 ½-inch squares
